A whole chicken with root vegetables is a great dinner for any cool evening. And this recipe is so simple to make!
If you have a roasting oven, place a layer in the bottom of multiple root vegetables (a few examples are onions, carrots, sweet potatoes, turnips, etc.) Pour half a cup of water over the vegetables and then add garlic and sea salt.
Place a whole chicken, rinsed and rubbed in olive oil and sea salt on top of the vegetables. Place an onion inside the cavity of the chicken for added flavor.
Season the top with paprika and poultry seasoning and any other fresh herbs like basil or rosemary.
Place the lid on the roaster and cook on the highest setting for 15 minutes. turn the chicken down to 250 and continue cooking for 2 hours. Check to make sure all juices run clear.
Serve root vegetables with the chicken for a filling, comfort meal.
